Today was my turn to bring something tasty into the office. Last night I made pumpkin muffins with a bit more of the fresh pumpkin we made over the weekend. I got the recipe from a woman on my mommies forum – it’s dead easy. You take one cinnamon streusel cake mix and mix it with a can of pumpkin. Bake and voila – pumpkin muffins. However, rather than using a can of pumpkin I measured out 15 oz. of the fresh pumpkin.
The muffins were VERY moist – to the point where I worried that they were undercooked (but upon opening one I saw it was fully-cooked. My only failure? I should have put in 1/2 teaspoon of nutmeg and 1/2 teaspoon of ginger or cloves to add a bit more flavor. The muffins are very bland and you can’t really taste the pumpkin itself. If anything, the ONLY thing the pumpkin did was make them super-moist.
They seem to be a hit at work, though. L-Train asked me to try again but not put sugar glaze on hers. I have one more streusel cake mix at home, along with 2 more cups of pumpkin, so I’ll probably give it another shot tonight and let Denis take them into work tomorrow if he wants to.
