Great Night!

Last night was a great night because I got a lot of stuff done. Upon arriving home I put the last of the laundry in the washer and then swiffered the first floor of the house. Then while Denis made dinner I gathered together the items for Mary’s wedding gift and put them all into one box (they came in two). Then I wrapped the gift and chalked one more thing off my list.

After dinner, and after the kids went to bed, I proceeded to make some cookies. I made an old family recipe cookie that I’ve had problems with over the past few years. The cookies are supposed to be these really light airy cookies that just kind of fall apart in your mouth, but mine have been super dense over the past few years and I couldn’t figure out why.

So last night I wanted to get it right. And boy did my cookies turn out fantastic. What did I do that was different? I melted the butter in the microwave until about 1/3 of it was actually MELTED. I used Splenda instead of sugar. I sifted the flour before adding to the sugar/butter mixture. I knew the cookies would turn out great the minute I started beating all the wet ingredients with the Splenda. The stuff is supposed to be really light and airy and that butter couldn’t have been more light and airy – I was amazed. And the finished product? HEAVENLY. I’ll be using Splenda from now on to make those cookies – I think it really made the difference since Splenda is more powdery than granulated sugar.

Then when Denis got home we chilled for a while and then I headed up to the attic to work on the Cootiehog website. I wanted to load up the new template and got NOWHERE with it. It’s weird because when the main page finally popped up it had COMPLETELY DIFFERENT GRAPHICS than the ones I uploaded to our server. So weird.

I ended up not going to bed until after midnight, but still managed to get up early today to get ready for work. We have major clients in today and had to look spiffy. And I look spiffier than normal because I’ve gotten a lot of compliments. *lol* I blewdry my hair and have my contacts in AND I put on mascara, which I normally don’t do.

    Did you use salted butter? I know that Mom does.

    I have no idea – I used whatever Denis had in the fridge. Chances are it was unsalted though.

    Yes, it was unsalted. We don’t have any salted butter in the house right now to my knowledge.

    So, J. could you tell the difference with the unsalted butter? I sure can when I have mistakenly done it. You’d need to compensate with a bit of salt. Can’t wait to try them on Sun. especially with the Splenda. Dad will p**p** that, I am sure.
