Almost Halfway To First Goal


LOVE IT. Only 1.5 more pounds and I’ll be halfway to my goal. That rocks.

And the past couple of nights I’ve really splurged, but despite this I’ve stayed around 1,700 calories, which isn’t too bad. Saturday night I had two helpings of meatloaf and then last night I had two chicken kievs and FOUR breadsticks (they were really good breadsticks). But on both days I PLANNED for the heavy dinners, so I was able to stay near the 1,700 calorie level.

Today I’ll make up for it though, and go light. I told Denis this morning that I was going to have a salad for dinner and not to plan anything else. I think he was okay with that and will most likely have the leftover chicken kiev.

    At least that speaks well of my meatloaf and chicken Kiev.

    I have to note that the meatloaf included chopped baby bella mushrooms. She went back for seconds and this is coming from a woman who refuses to eat ‘shrooms. She did ask if I did something different with the meatloaf.

    Yes, I added mushrooms which I never do, but I also added shreded cheddar cheese and three slices of cooked chopped bacon.

    As we all know, everything tastes better with bacon. Jane said yesterday to some members of our church small group, bacon and garlic — the two best ingredients in the world. I’m paraphrasing but you get the idea.

    And if you’re worrying, I use a double meatloaf pan that allows for the fat and juices to drain away from the meat. Plus I normally cook with 90% lean ground beef. Not as bad as it all sounded, right?

    Well, it sounds absolutely fabulous but even with draining the fat it certainly couldn’t count as “low fat” in any way, shape or form. A great Atkins Diet recipe, though. 🙂

    I believe it’s a medium-fat recipe. Ground turkey would have ruined it. I’ve used it twice before and it taste nothing like “traditional” meatloaf Come on. The mushrooms were low-fat.

    You go, Jaynee! That is awesome progress on your weight loss! (I’ve been out of town for a couple of weeks and missed a lot!)
