Y’all – have you joined Pinterest yet? If not, you must. Because last week I found the most amazing recipe for chocolate cookie dough. Now, that doesn’t sound like that big a deal, but what if I told you that it was a recipe for SINGLE SERVE cookie dough. Still not interested? How about the fact that the recipe contains no eggs, so you can eat it raw?
Got your attention now?
If you are a cookie dough freak like me, you know that 7/8ths of the fun of cookie making is eating the dough. In fact, many times I’ve made the dough and lamented putting it in a hot oven to bake. Cookie dough IS JUST PLAIN AWESOME.
So last night I was hankering for some cookie dough and whipped up a batch of the recipe someone linked to at Pinterest. And sure enough – in less than 2 minutes I had a little bowl of dough equivalent to two or three drop cookies. And it was divine. The batch I made last night was a little overly sweet, so just now I whipped up another batch to show CootieGirl, and used a bit less brown sugar – the result was perfect, and she declared it good!
So here’s the recipe.  DO NOT try to bake this dough – it doesn’t have all the ingredients required to let them rise. This is strictly no-bake, enjoy-raw, enough for one person cookie dough.
- 1 1/2 tbs butter – softened (not melted)
- 3 tbs flour
- 1 3/4 tbs brown sugar (the original recipe calls for 2 full tbs, but I felt that was too sweet – so 1 3/4 worked well)
- Â 1/4 tsp of vanilla
- 1/4 tsp of milk
- then drops of milk to obtain dough consistency
- Chocolate chips
Step one: mash up the butter. Step two: add all dry ingredients and mash together with the butter into you get a crumbly consistency. Step three: add in vanilla and about 1/4 tsp of milk. Mash together, and continue adding DROPS (emphasis on DROPS – a little goes a long way) of milk until you get to the typical cookie dough consistency. Mix in chocolate chips.
That’s it. You now can eat it knowing you won’t be risking life and limb since there are no eggs. Trust me – this is outstanding and will become a staple in my household.
