Well, Mr. BIL just went into his long meeting, and with only one dictation left to do I’m about at the end of my task list because the rest of my stuff requires his review before I can move forward.
Last night I took a Chocolate Eggnog pie over to our lifegroup meeting. It went over well, I think, despite my screwup. I had started the pie on Saturday night and fell asleep on the sofa and didn’t get up to do the second part of the pie which involved making stuff whipping cream and folding in the still liquid eggnog portion. So when I woke up on Sunday morning I found the eggnog portion appropriately hardened by the gelatin. To compensate for the too-hard eggnog portion I only whipped the cream until it was mildly thick. Mixed the two together and promptly realized I should have definitely continued to whip the cream until it was truly creating stiff peaks.
Sure enough, a few hours later when we left for lifegroup, the top portion of my pie was still a bit soft. Oh well. It still TASTED fine and I’ve learned my lesson for when I make the pie in a couple weeks for the party.
Speaking of the party – we’re up to 26 confirmed attendees, with another 4 waiting to find out their schedules. VERY excited and can’t wait. Denis and I worked on our menu over the weekend and came up with a list of FOURTEEN hors d’oeurves we’d like to consider serving. I told Denis we need to get that down to 8-9 tops.
CootieBoy still wants to fly a kite. In fact, this morning he once again said he did NOT want to go to school but wanted to fly the kite. Maybe it’ll be windy on Thursday and I can take him out again. In other CootieBoy news, last night at lifegroup one of the other little boys had to go potty, so CootieBoy followed him in there. He watched the other little boy go potty and decided he wanted to go too. What made it so funny was that the other little boy stood up to go potty, which CootieBoy doesn’t usually do (he usually sits on a potty seat). But he was fascinated seeing the other boy stand. So CootieBoy promptly stripped down and stood to go potty. He was VERY pleased with himself, as he should be. *lol*
I told CootieGirl this morning that we’d be making a pumpkin pie this week. She was VERY excited. Little does she know the Christmas Cookie Baking Frenzy is also about to begin. I have to make no less than 30 dozen cookies between now and the party.
No worries, the full list of appetizers will stay in effect. Since I will be making all but one or two of them, I have no problem with this. Whoo Hooo!!!!!
If we end up doing the dog swap on Sunday, then I can help cook in between tending to Jesse and whatever else goes on that day.
