Today I took the day off because my small group from church is doing Christmas Dinner for a transitional shelter in the next town over. We’re making dinner for 55 folks and I think it’s going to be a lot of fun.
Here’s the menu:
1 large turkey
1 huge roast beef
1 large ham
Dinner rolls
Glazed carrots
Corn
Cottage potatoes (similar to scalloped potatoes)
Mixed salad
Pumpkin pie
2 large sheet cakes
another pie
5 dozen cookies
Plus sodas, juice, milk and coffee
We also had our church get involved and do Secret Santa for the kids at the shelter. There are 21 kids there from infants to teenagers, and my church stepped up and my garage is stuffed with gifts for these kids. Our pastor has also been asked to come and speak to the folks at the shelter.
Last night the small group came over for some pizza and to go over the last details for tonight’s event. Denis had bought a Santa suit at Party City and one of our guys tried it on last night – it fit him PERFECTLY. He was having so much fun he went to our next door neighbor’s house (who also go to our church) and harrassed them for a while.
The event tonight starts at 6 p.m. so I’m already busy at work. I boiled 20 lbs of potatoes last night and then prepped the actual potato dish (it involves onions, peppers, bread crumbs, cheese and butter). I’ll put those in the oven at around 4 p.m. to get the cheese mixture all gooey and melted. I love cottage potatoes. I just finished baking 128 dinner rolls and now have a pumpkin pie going in the oven.
Once that is done I’ll head out to the actual shelter to check out the room we’re using – I have never been there and need to know what kind of supplies they have so that if they are missing anything I can go out to Party City and pick up those things.
So, needless to say I have a busy day (no I’m not making ALL the items I listed – just the potatoes, pie, rolls, and coffee) and probably won’t be posting again until tomorrow!
Sounds fantastic! (my stomach just growled) What a wonderful Christmassy event. The kids will be very happy I’m sure!
When you get the chance, post the recipe for the potatoes. I’m sure other would enjoy them.
